Not much happened this week, which is a good thing I guess. I’m taking walks every day after lunch, so I was grateful the weather’s been quite nice in Stuttgart. I also made Aglio e Olio for lunch yesterday and a few people who saw the photos asked the recipe, both on and offline. It’s super easy and filling, which is what you need sometimes on a sunny day. I didn’t have some ingredients like fresh Italian parsley or parmesan cheese, but it was good all the same.
The recipe is quite simple. The ingredients: spaghetti pasta, extra virgin olive oil, garlic, pinch of salt, ground pepper, chili flakes (optional), fresh Italian parsley (optional), parmesan cheese (optional).
Cook the spaghetti according to the packaging. You can use any type of pasta, but it’s a tradition to use something similar to spaghetti. Drain it and leave it out from the heat for a while. Cook the garlic in extra virgin olive oil until the garlic is a light golden brown. The key here is to use really good olive oil, since that’s what makes the difference. Reduce the heat and add a pinch of salt, a lot of ground pepper (of course, according to your taste but I like ground pepper) and if you have on hand, throw in the fresh Italian parsley and a sprinkle of parmesan cheese. Add in the pasta and mix well. Some recipes say to add some chili flakes, but I prefer the simpler version but go ahead if you like a bit of spiciness.
Tomorrow (April 9) is shopping night in Stuttgart, which means the shops around the city will be open until midnight. Good luck to everyone who’s going out for some shopping and happy weekend!
