No, I haven’t joined the sour dough wagon just yet.
I was wondering why flour was always missing in our supermarket and thought it was a German thing. But no, the entire world is on a baking frenzy and I couldn’t be happier (not the flour part, but to join in on the trend). So I wanted to share some of my favorites, both quick and easy and also great to do with your little ones.
Blueberry muffins

One of my favorite muffins are blueberry muffins and it took a while to find a good, solid recipe. I think we found one, but I’m more than eager to try others still. I’ve switched to raspberries once and it worked out well, also used frozen ones and it worked fine too.
Granola
I was always more of a cereal person, but now I’m fully committed to granola. The German world, which includes Austria and Switzerland, also love their muesli, but I’m not so much into it, to be honest. And there are so many wholesome, healthy recipes online. My favorite is from Pick Up Limes, she has so many but we really love this one.
Cream cheese cookies

A recent find and was pleasantly surprised on how easy it is. They’re light, not too sweet, so easy to make and just enough to satisfy your afternoon sweet tooth. I found this recipe on instagram (like many of the other recipes here) and it eventually landed on my recipe book. I like to make them a bit smaller so I get more in quantity, but this is up to you.
Sugar Cookies
Easiest cookie recipe and they don’t make 24. From Dessert for Two, quick and easy, not the healthiest because it’s basically flour and sugar, but you can make around 6, so it’s perfect. Done and done.
Chocolate chip/M&M cookies
Perfect when you want to bake something, nothing too extravagant, but easy, quick and yum. Dessert for Two is my go-to these days, because I just can’t afford to have too much sweets in my kitchen and she delivers. These cookies were made for Valentine’s Day but you can obviously make them with normal M&Ms, or even just normal chocolate chips. I added some nuts to the batter to make it more, well, wholesome, and they turned out great.
Buttermilk pancakes

There was a time when I was on an ongoing search for good, fluffy and easy pancakes. Pancakes tend to be different depending on the country, I found, and I’m more into the fluffy, buttery American type. And I found them. Bon Appetit’s Best Buttermilk Pancakes are easy to make, quick to assemble and fluffy. We make them at least once a week and we love.
Olive oil cake
A classic in our kitchen. I make this when I’m visiting anyone for dinner, when there’s a party, baked it for A’s kindergarten party and more. It’s easy, doesn’t need too many ingredients, mostly what you would already have, and yum.
Banana bread

“If you haven’t made banana bread during these times, did you even bake?” is what everybody’s saying. And it’s true. I think I baked a couple of times, made them as muffins, and now I think I’ll wait for a while before I whip out this recipe again. But a classic, nonetheless. I’m not sure where I got the recipe, but I’ve changed a bit here and there, and it works for us.
Mini Cinnamon rolls

Cinnamon rolls are one of those things where you are so ready to eat them, but when it comes to actually making them, you’re not sure. Mostly because it takes a bit more time, mostly overnighting, and just a hassle. So I tried Dessert for Two’s quick recipe and although it wasn’t 100%, it was more than enough to satisfy my cinnamon roll tooth. Very satisfying and also not so much so you don’t feel guilty eating too much.
